As part of an annual tradition, chef, sommelier, and oyster expert Daniel Lewis will dazzle the senses with seven ways to enjoy oysters, starting with a guided oyster tasting on the half shell and a crash course in all things oyster related, followed by six more courses of prepared oysters both raw and cooked. These creative preparations push all the boundaries of what can be made from perhaps the most sustainable protein source on earth. All courses are served with a wine selected specifically to enhance the dish and broaden the guests’ horizons on the creative science behind food and wine pairings.
